Baked Brie in Puff Pastry with Raspberry

Rich, creamy, dessert like. It always disappears. I'm always asked for the recipe. Raspberry preserves goes great in this as well as using leftover cranberry relish from the holidays.......
Ingredients
0.5 (17 ounce) package frozen puff pastry, thawed
1 (8 ounce) package brie cheese, round
1/8 cup toasted almond, slices (optional)
1/4 cup Raspberry preserves

Directions
Preheat oven to 425.  Lightly grease cookie sheet.  Roll puff pastry out slightly.

Place cheese wheel on top (leave rind on).  Place preserves on top of cheese.  Place almonds on top of preserves.

Bundle Puff Pastry up and around the cheese.

Bake for 20-25 minutes.  Let cool for five minutes.  Serve with your favorite crackers. Enjoy!

Pasta Puttanesca with Bitter Greens Salad

This sauce is named for ladies of the night. They would place pots of it in their windows to tempt men into the bordellos. I like it because it's spicy, fast and easy.  Hmmm.......

Ingredients
2 tablespoons (2 turns around the pan) extra-virgin olive oil
4 to 6 cloves garlic, chopped
1 tin flat anchovy fillets, drained
1 /2 teaspoon crushed red pepper flakes
20 oil-cured black olives, cracked away from pit and coarsely chopped
3 tablespoons capers
1 (32-ounce) can chunky style crushed tomatoes
1 (14.5-ounce) can diced tomatoes, drained
A few grinds black pepper
1/4 cup (a couple of handfuls) flat leaf parsley, chopped
1 pound spaghetti, cooked to al dente (with a bite)
Crusty bread, for mopping
Grated Parmigiano Reggiano or Romano, for passing, optional

Directions
Serving suggestions: a simple salad of mixed bitter greens dressed with oil and vinegar, salt, and pepper, recipe follows

Heat a large skillet over medium heat and add oil, garlic, anchovies, and crushed pepper. Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.

Toss sauce with cooked pasta. Pass bread and cheese at the table and serve with a simple salad of mixed bitter greens dressed with oil and vinegar, salt, and pepper.

Bitter Greens Salad:
4 cups (about 2 bundles) arugula leaves, coarsely chopped
1 1/2 cups (about 1 bundle) watercress leaves, coarsely chopped
1 head Radicchio lettuce, coarsely chopped
1 large lemon
Extra-virgin olive oil, to coat, 2 to 3 tablespoons
Coarse salt and black pepper
Oil cured black olives, for garnish, optional


Combine greens in a salad bowl. Squeeze the juice of 1 lemon over the bowl. Drizzle salad liberally with extra virgin olive oil. Toss salad and season salad with salt and pepper. Arrange salad on plates. Garnish plates with black olives, if using.

Mother's Day Tea Sandwiches

Make Mother's Day Special...
Serve an old-fashioned favorite, tea sandwiches, for an afternoon with Mom.
1. Tomato-Cheddar Spread mayonnaise on white bread. Sandwich with sliced tomato, aged cheddar and watercress. Trim the crusts and cut into pieces.

2. Ham, Brie and Apple Spread softened butter and dijon mustard inside a split loaf of French bread. Fill with deli ham, sliced brie and sliced green apple. Cut into pieces.

3. Cucumber-Butter Mix 4 tablespoons softened butter, 1/2 teaspoon grated lemon zest and 1 tablespoon chopped fresh herbs. Spread on white bread and sandwich with sliced cucumber. Trim the crusts and cut into pieces.

4. Watercress-Butter Make Cucumber-Butter Sandwiches (No. 3) but fill with watercress instead of cucumber.

5. Grilled Shrimp–Ham Puree 1/4 cup jarred piquillo peppers with 3 tablespoons mayonnaise. Spread on white bread. Sandwich with grilled shrimp and sliced serrano ham. Trim the crusts and cut into pieces.

6. Steak au Poivre Mix 4 tablespoons each softened butter and chopped fresh herbs. Spread on baguette rounds. Top with thinly sliced steak and crushed peppercorns.

7. Pea-Prosciutto Puree 1/2 cup thawed frozen peas with 1 tablespoon each olive oil and water in a blender; season with salt and pepper. Spread inside a split loaf of focaccia and fill with prosciutto and shaved parmesan. Cut into squares.

8. Olive-Focaccia Mix 1 cup chopped olives and 3 tablespoons chopped parsley. Drizzle the inside of a split loaf of focaccia with olive oil; fill with the olive mixture and sliced provolone. Cut into squares.

9. Asparagus Mix 3 tablespoons softened butter with 1 tablespoon chopped fresh herbs. Spread on pumpernickel bread; cut into rectangles. Slice cooked asparagus tips in half lengthwise; lay on the bread and drizzle with lemon juice and olive oil. Top with chopped hard-boiled egg, salt and pepper.

10. Anchovy–Lemon Butter Mix 1 stick softened butter with 1 tablespoon grated lemon zest. Spread on white bread. Sandwich with anchovies, sliced tomato and Bibb lettuce. Trim the crusts and cut into pieces.

Belize Shredded Brisket Tacos

Corn tortillas are a low-fat, low-sodium food and provide potassium, calcium, and fiber in less than sixty calories per serving.
Contrary to popular belief, tortillas will not make you fat if they are part of an adequate diet.


For a lighter version of this dish be sure to serve on warm corn tortillas and eliminate naughty cheese and creams, and instead top with a tasty homemade salsa and avocado slices.

Ingredients
2-4 pounds beef brisket, fat trimmed
2 ounces/pound of liquid smoke (recommend Claude’s Brisket Marinade Sauce)
2 bay leaves
1 (12-ounce) light beer
Corn tortillas
Salt to taste
Pepper to taste
Topping Options
Grated cheese
Crema Mexicana
Cilantro
Onions
Avocado slices
Salsa

Directions
Place all the ingredients into the slow cooker and marinate overnight. Cook on low for 8 to 10 hours.
Remove the brisket and shred the meat. Warm corn tortillas, add shredded brisket, and garnish with your favorite toppings.

Diva-licious Chicken Corn Chowder

Chicken, corn, and zesty tomatoes combined with cream of chicken soup make for a quick hearty meal that will have them asking for more!
Ingredients
2 tablespoons butter w/ drizzle of Olive Oil (to prevent burning)
1 pound boneless skinless chicken breasts, cut into small pieces
1 cup chopped onion
1 teaspoon ground cumin
1 10-3/4 ounce can reduced sodium condensed cream of chicken soup
1 10-ounce can RoTel Original Diced Tomatoes & Green Chilies, undrained
1 cup frozen whole kernel corn
1/2 cup water

Directions
Melt Butter & Olive Oil in large saucepan or Dutch oven over medium-high heat. Add chicken and onion; cook 4 to 5 minutes or until chicken is no longer pink and onion is tender, stirring frequently.
Add cumin; cook and stir 1 minute. Add remaining ingredients. Increase heat to high, cover and bring to a boil. Reduce heat to medium-low; simmer 10 minutes.  
Stand back and allow all to praise you!!!

St. Patrick's Day Popcorn

We can't possibly celebrate St. Patty's Day without some fun snacks! Try St. Patrick's Day Popcorn Recipe. Everyone's eyes will be smilin' when they see this candy corn with an Irish twist.  The green color gives the snack instant holiday appeal.
St. Patrick's Day Popcorn Recipe 

Ingredients
4 quarts popped popcorn
1 cup sugar
1/2 cup packed brown sugar
1/2 cup water
1/2 cup light corn syrup
1 teaspoon white vinegar
1/4 teaspoon salt
1/2 cup butter
8 to 10 drops green food coloring

Directions
Place popcorn in a large roasting pan; keep warm in a 250° oven. Meanwhile, in a large heavy saucepan, combine the sugars, water, corn syrup, vinegar and salt. Cook and stir over medium heat until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 260° (hard-ball stage).
Remove from the heat; stir in butter until melted. Stir in food coloring. Drizzle over warm popcorn and toss to coat. Cool. Break into pieces. Store in an airtight container.

Oma's Roasted Chicken Recipe

This is my grandmother's, "Oma", recipe for roasted chicken. We are German and she used to do it this way all the time. I never have had a chicken this juicy before; this little trick works and makes the people eating it go silent. It's funny. We nibble on the celery after.
 

Ingredients
1 (3 pound) whole chicken, giblets removed
salt and black pepper to taste
1 tablespoon onion powder, or to taste
1/2 cup salted butter, divided
1 stalk celery, leaves removed


Directions
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons butter in the chicken cavity. Arrange dollops of the remaining margarine around the chicken's exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity.
Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted butter and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
